A three-course dinner weaving together Colombian roots, Chinese depth and Vietnamese brightness. Created with intention and high frequency ingredients.

Entrée
Corn arepita crowned with slow-braised beef in warming five-spice, inspired by Traditional Chinese Medicine, and brightened with fresh Vietnamese pickles for balance.Vegan option: plantain instead of beef

Main
Steamed cod fillet with ginger–scallion–soy sauce. Ginger is revered in both Ayurvedic and Eastern traditions for its digestive and warming properties – served on a bed of silky yucca purée and accompanied by a lemongrass–coconut jus and seasonal vegetables.
Vegan: eggplant instead of cod 

Dessert 
Caramel flan with yuzu ginger syrup. Ginger lending it’s warm, medicinal touch – finished with a delicate black sesame crisp, a seed long celebrated in Eastern Medicine for nourishing yin and supporting vitality.
