MENU by NA KU Unfold
A three-course dinner weaving together Colombian roots, Chinese depth and Vietnamese brightness. Created with intention and high frequency ingredients.

Entrée
Corn arepita crowned with slow-braised beef in warm healing spices, inspired by Traditional Chinese Medicine, and brightened with fresh Vietnamese pickled rettich.
Vegan substitute: plantain instead of beef

Main
Steamed cod fillet with ginger–scallion–soy sauce. Ginger is revered in Eastern traditions for its digestive and warming properties – served on a bed of silky yuca purée and a lemongrass–coconut jus.
Vegan substitute: Daikon steak instead of cod 

Dessert 
Caramel flan with yuzu ginger syrup. Topped with a delicate black sesame crisp. A seed long celebrated in Eastern Medicine for nourishing yin and supporting vitality.
